Salad-Side Dish of Pearl Barley Recipe
This dish can be served cold, as a salad, or warm, as a side dish. Very tasty.

  1. To prepare the salad, the grits must be boiled. I always cook the pearl barley for no more than 40 minutes, so it remains whole and elastic and does not boil.
  2. For the dressing, mix the olive oil, salt, black pepper and lemon juice.
  3. Put the pearl barley, corn and beans in a bowl.
  4. Add the chopped parsley.
  5. Add the dressing to the salad and mix.
