Baked Eggplant with Beans Recipe
Today I want to treat you to a new dish! My favorite eggplant! Only today without meat, but so delicious! Simple, fast! Beautiful! Help yourself!

  1. Cut the eggplant lengthwise into strips. Add salt and leave until sweating.
  2. Wash the eggplant and dry it with kitchen napkins. Fry in sunflower oil until brown. Spread the fried eggplant on a napkin to drain the excess fat.
  3. Drain the juice from the beans (if you have boiled beans, then drain the water in which it was cooked).
  4. Finely chop the onion and fry it in sunflower oil.
  5. Chop the beans in a blender. Add the fried onion and stir.
  6. Add soy sauce. Stir. Add salt and pepper to taste.
  7. On the bottom of the form (I have 20×20) spread the eggplant, a little overlap.
  8. Spread the bean filling. Level it out.
  9. Top with 3 tablespoons of tomatoes. Flatten with a spoon. Lay out a layer of eggplant Pour in the remaining tomato sauce.
  10. Cover with foil and bake for 30 minutes. Remove the foil and bake for another 10 minutes.
