Catalan Candy Recipe
Catalan sweets – Catànies, a brand invented half a century ago by Catalan pastry chef Joseph Coudier. Since I didn’t have almonds on hand, I successfully replaced them with hazelnuts. The candies, I must say, are amazing! Hand and reaches for the next one.

  1. Chop the nuts in a blender (I beat them in a coffee grinder) (the hazelnuts are pre-fried to ruddy barrels, so, in my opinion, the taste turns out to be more saturated).
  2. Melt the sugar in a bowl with a thick bottom (sugar quickly turns brown, you need to be careful that it does not burn)
  3. Add the nuts to the hot sugar and mix well. Place on paper to cool.
  4. Grind the cooled nut mixture in a blender into fine crumbs. The praline is ready.
  5. Melt white chocolate with butter in a water bath.
  6. Spoon the praline into the chocolate-butter mixture.
  7. Until the mixture becomes thick. If the mixture turns crumbly, add the chocolate. If you get liquid, add a glass of chopped nuts.
  8. To form lollipops with my hands (I got 12 pieces). Be sure to put a nut inside each candy. Put it in the refrigerator for a while. I put it in the freezer for 10 minutes.
  9. Melt the milk chocolate (I use a microwave oven). Each candy is “bathed in chocolate”. Refrigerate for 15 minutes. Then decorate (this is optional) (I made strips of white chocolate). You can roll the candy in cocoa or sprinkle with grated waffles.
