Catalan sweets-Catànies, the brand invented half a century ago by Catalan pastry chef Joseph Cudié. Since I did not have almonds on hand, I successfully replaced it with hazelnuts. Candy is amazing, I must say! Hand and stretches for the next.
Nuts grind in a blender (I'm beat in a coffee grinder) (hazelnut pre-fried to rosy barrels, so I think the taste is more intense).
Sugar to melt in a bowl with a thick bottom (sugar quickly becomes brown, you need to be careful not to burn it)
In the hot sugar add the nuts, mix well.
Put on paper for cooling.
The cooled nut mixture is ground in a blender into small crumbs. Praline is ready.
White chocolate with butter melt in a water bath.
A spoon pour the praline in the chocolate-butter mixture.
Until the mixture becomes thick. If the mixture get crumbly, add the chocolate. If the liquid add Cup chopped nuts.
Hands to form a candy (I got 12 PCs). Inside each candy is sure to put a nut. Put it in the fridge for a while. I put it in the freezer for 10 minutes.
Melt milk chocolate (I use the microwave). Each candy "bathe in chocolate". Put in the refrigerator for 15 minutes. Then decorate (this is optional) (I did strips of white chocolate). You can roll the candy in cocoa or sprinkle with grated waffles.
