A very popular snack in Romania is “Salad de vinete”. It is also called “poor man’s caviar”. Delicious and savory. It is very good as an addition to meat, baked or grilled, but it is no less delicious with bread.
Cut the eggplants with a knife and bake at a temperature of 200 degrees for about 45-50 minutes.
Finely chop the onion, add salt and pepper to taste and marinate it in vinegar.
I have 25% vinegar. Vinegar is also taken to taste. You can also take lemon juice.
Marinate for about 15 minutes.
Peel the eggplant and finely chop it with a knife.
Mix with the onion and add the oil. The oil is also taken to taste, either refined or unrefined.
Finely chop the dill and add it to the salad, but you can do without dill.
