A very popular snack in Romania, “Salad de vinete”. It is also called “poor man’s caviar”. Delicious and savory. It is very good as an addition to meat, baked or grilled, but it is no less delicious with bread.
Chop the eggplant with a knife and bake at 200 degrees for about 45-50 minutes.
Finely chop the onion, add salt and pepper to taste and marinate it in vinegar.
I have 25% vinegar. Vinegar is also taken to taste. You can also take the juice of a lemon.
Marinate for about 15 minutes.
Peel the eggplant and chop it finely with a knife.
Mix with the onion and add the oil. Oil is also taken to taste, or refined and unrefined.
Finely cut the dill and add to the salad, but you can do it without dill.
