You can opt for just egg yolks instead of whole eggs, which will result in a slightly thicker sauce with a richer taste and creamier color. Use a neutral-flavored oil to prevent any overpowering tastes. Adjust the amount of garlic to suit your preference.
  2. Peel, wash, and either press the garlic through a garlic press or finely chop it with a knife. Even if you have confidence in your blender’s capabilities, it’s better to prepare the garlic in advance to avoid large chunks in the sauce. The ample amount of oil in the sauce can make it challenging for the blender to thoroughly crush garlic.
  3. Combine the vegetable oil, eggs, and lemon juice in a blender or a deep bowl suitable for whisking.
  4. With the immersion blender held at the bottom of the bowl, blend until the mixture turns mostly white.
  5. Add a pinch of salt and pepper, along with the chopped garlic. Continue blending the sauce until it becomes fluffy and uniformly white.
  6. Transfer the finished sauce into a glass or ceramic container with a lid. You can use it immediately or store it in the refrigerator for up to a week.
