Mint baskets with avocado cream are an amazing, tender and light dessert! Fragrant baskets of marzipan that melt in your mouth; tender, a little cool, avocado-cream with mint flavor is refreshing on hot days. This dessert is very tasty and filling!
In a bowl, combine the sifted almond flour, Jerusalem artichoke syrup and lemon juice. Knead dough. Put it in a bag and put it in the refrigerator for 30 minutes.
For the caramel, melt the coconut paste in a water bath. Combine with the syrup in a bowl, carefully knead with a spoon.
Melt the coconut paste in a water bath. Peel and dice the avocado. In a blender bowl, combine all the ingredients (avocado, Jerusalem artichoke syrup, coconut paste, lemon juice, mint).
Beat until smooth.
Roll out the marzipan (base) approximately 0.5 cm thick. Cut out the shape (glass) of the mug. Put them in silicone molds, smooth them evenly with your finger along the bottom and sides.
Put the caramel in the bottom of each basket.
Using a pastry bag, drop the avocado mint cream into the inside of each basket. Remove to the freezer until completely solidified for 1-2 hours.
When ready, carefully remove the mint baskets from the mold. Decorate as desired.
