  1. Wash and rub the mushrooms well – do not remove the skin. Cut lengthwise into quarters.
  2. Chop the green onion (not very finely, so that the pieces are about half a piece of mushroom) and add to the mushrooms.
  3. Finely chop the parsley and season with salt and pepper. Add olive oil and lemon juice. I always add to the glaze, but it should turn sour. Mix well.
