  2. Peel the onion, rinse it, and then chop it into several pieces. To avoid onion-induced eye irritation while cutting, rinse both the onion and the knife with cold water.
  3. Use a meat grinder to process the chicken meat into a fine mince. Transfer the minced meat to a deep bowl. If the resulting minced meat seems dry, consider adding a bit of kefir to enhance juiciness.
  4. Pass the onion through the meat grinder as well. Mix the chopped onion with the minced meat. To make the cutlets more substantial, you can include carrots, potatoes, or soak a loaf of bread in milk and add it to the mixture.
