Eggplant with Beans Recipe

Ingredients

Soy sauce
Instructions
Cut the eggplant, sprinkle with salt and leave for 15-20 minutes to leave the bitterness. Then we wash them and dry them.
Chop the onion into half rings, cut the carrots into strips. Fry them in oil for 7-10 minutes. Then add the eggplant and fry for another 5-7 minutes.
Then put the tomato paste, soy sauce, pour 1/2 cup of water. Bring to a boil, reduce the heat to medium and simmer for 15 minutes.
At the end, add the beans, salt, pepper, and garlic. Keep on fire for another couple of minutes and remove.
Sprinkle with herbs before serving.
