  1. Cut off the leaves of melissa, rinse them in water.
  2. Wash and dry the purple gooseberries.
  3. Put the berries and lemon balm leaves in a glass blender, pour 500 ml of water and add lemon juice.
  4. With an immersion blender, whisk everything well together for 2-3 minutes.
  5. Strain the mixture through cheesecloth folded three times.
  6. Pour the remaining cake with another 500 ml of water and punch it again with a blender. Strain again through a triple layer of gauze, squeeze well.
  7. Add honey or sugar to taste. You can put more or less honey – depending on which sour or sweet juice you like. Ready!
