Cook the noodles according to the instructions on the package and cool. Prepare the dressing by mixing ginger, garlic, peanut paste, sesame oil, soy sauce, and rice vinegar in a blender.
Mix the dressing with the noodles. Add thinly sliced vegetables (I have carrots and bell peppers), mix.
Before serving, add green onions and coriander to the salad and sprinkle with roasted peanuts.
Garnish with a slice of lime.
