  3. Mix mirin and soy sauce. If there is no mirin, then a semi-sweet white wine will do. Close the container and put it in the refrigerator for 8 hours.
  4. In 8 hours, the yolks will be covered with a strong shell, and inside there will be a thick yolk soaked in sauce. And if you hold it for a day, the yolks will turn amber and even thicker.
