Scandinavian Salad with Fresh Cucumbers Recipe
I found a lot of salads with cucumbers on the site, but I didn’t find this recipe, so I decided to share it. This is another recipe from the collection of recipes of the wonderful St. Petersburg chef Ilya Lazerson. The salad is prepared in a few minutes, but, despite its simplicity, it has a very fresh taste that goes well with fried fish and meat. In addition, it looks quite original and can become a decoration for any table.

  1. Take a fresh cucumber long. We use about half for two servings, but we don’t need to cut it off right away-it will be more convenient to work with it this way.
  2. Cut the cucumber into thin strips with the help of a housekeeper (vegetable peeler). The first strip, which is almost exclusively from the peel, is thrown away. When we get to the core with the seeds, we can start from the opposite side.
  3. Cut the core with seeds with a knife into thin plates. When done, put the cucumber strips in a bowl.
  4. Take the dill and finely chop it.
  5. Add the dill to the cucumbers in a bowl and mix gently with your hands. Just do not fill the salad, otherwise it will let the juice and become flabby, especially since the dressing is very simple.
  6. Before serving, put the salad in a bowl, sprinkle with salt, sugar and sprinkle with vinegar. Mix gently.
  7. Serve with fried fish or meat.
