Instructions
In a bowl, whisk the yolks and add sugar to them. In parallel, melt the chocolate in a water bath.
Whisk the yolks with sugar with a whisk until they lighten. Add cognac to this mixture. Put the mixture in a water bath and continue to beat.
Then add the cooled chocolate and continue to beat the mixture in a water bath.
Separately, whisk the cream in a blender.
Mix two masses of chocolate and cream, mix with a spatula.
Pour the mousse into the creamers and put it to freeze in the refrigerator for 2-3 hours.
When serving, sprinkle the mousse with cinnamon and grated chocolate.
