1. Cut the eggplant into small cubes.
2. Fry them in preheated oil for 15 minutes, stirring constantly.
3. Add the soy sauce and fry for another couple of minutes. If you don’t like soy sauce, just add salt.
4. While the eggplant cools, we chop the nuts and garlic.
5. Cut the cheese and tomatoes into strips.
6. Well, now add tomatoes, cheese and garlic to the eggplant, pepper and mix.
7. Spread on a plate and sprinkle with nuts.
