Fried Courgettes with Onions and Spinach Recipe
Last summer in Greece, we were served this dish at a hotel. I really liked it. Once at home, I cooked it, slightly improving the cooking technology (there was too much oil in the hotel, and the zucchini looked like stew). Now this is one of my favorite zucchini recipes. A frequent dish on our summer table.

  1. Cut the zucchini into 1 cm thick circles .
  2. Finely chop the onion.
  3. Fry the zucchini and onion until soft, add salt to taste.
  4. 2-3 minutes before the end of frying, add finely chopped spinach. You may need to add some water to keep the spinach from sticking to the pan.
