  1. I always cook eggplants in the microwave – both fast and juicy, and they are not soaked in oil. Prick a small eggplant with a fork or knife in two or three places and put it in the microwave for 4 minutes. I have a capacity of 750 ml, small eggplants should be ready in 4 minutes, if the eggplants are larger, then it takes 5-6 minutes.
  2. Cut the finished eggplant into cubes. Scald the tomato with boiling water, remove the skin (you can not remove it – as you like. I always take off), cut into cubes. Mix minced meat (I have pork and beef, you can have any) with buckwheat flakes, eggplant, tomatoes, egg, finely chopped onion, season with salt and pepper. If desired, you can add greens.
  3. Minced meat.
  4. Put the bacon on top of each other, form a cutlet from the minced meat and wrap it in bacon. I sprinkled one croissant with black sesame seeds – just for beauty. (If you don’t have bacon, just shape the cutlets, brush with vegetable oil on top and bake – it will also be very tasty).
  5. Bake in a preheated 180 degree oven for 25-30 minutes (depending on your oven).
  6. Serve it on the table. Excellent both hot and cold.
  7. Ready!
