Sherbet or Granita (in modern terms) – frozen fruit juice, crushed into a light crumb. Peach with champagne even without freezing just amazing taste! The frozen sorbet is very refreshing in the heat. Gorgeous dessert for a summer holiday table.
Peel the peaches and remove the seeds. Cut into large pieces.
Chop the peach in a blender.
Put the peach puree in a metal dish. Add powdered sugar, vanilla sugar, and the juice of 1 lemon. Mix everything with a mixer.
Pour in the champagne and stir.
Put in the freezer for 1 hour.
After an hour, remove the puree, beat well with a whisk.
Then put the bowl back in the freezer for 1 hour.
Pre-cool the cremans. You can put it in the freezer for 5 minutes.
Before serving, beat the sherbet again, pour in the apricot liqueur, mix again and put it in the cooled cremans.
