  1. Boil the rice. Chop the onion.
  2. Cut eggplant and tomatoes.
  3. Cut the zucchini.
  4. Prepare the peppers. Cut in half and remove the pulp.
  5. Fry the onion and eggplant in vegetable oil until half cooked.
  6. Add zucchini. Simmer for about 10 minutes.
  7. Add tomatoes and herbs. Simmer for 5 minutes.
  8. Add rice, salt and pepper. The filling is ready.
  9. Arrange the vegetables over the peppers. Bake at 180°C for 35-40 minutes.
