  1. Cut the onion into half rings and marinate in lemon juice. Cut the carrots into strips (or grate on a coarse grater). Cherry tomatoes cut in half, large tomatoes – into 4-6 parts.
  2. For dressing, mix olive oil, balsamic vinegar, mustard, salt and pepper.
  3. Put the onion (lemon juice drained), carrots and tomatoes in a deep bowl, pour over the dressing, mix well. Sprinkle with pine nuts before serving.
