A very simple, juicy, light salad of tomatoes of different varieties with fresh carrots and pickled onions. It will pleasantly surprise you with its taste and bright appearance.
Cut the onion into half rings and marinate in lemon juice. Cut the carrots into strips (or grate on a coarse grater). Cherry tomatoes cut in half, large tomatoes – into 4-6 parts.
For dressing, mix olive oil, balsamic vinegar, mustard, salt and pepper.
Put the onion (lemon juice drained), carrots and tomatoes in a deep bowl, pour over the dressing, mix well. Sprinkle with pine nuts before serving.
