A Bulgarian colleague shared the recipe for such a snack with me. she said that eating this in hot weather is a very tasty appetizer or salad, but for me it is already a self-sufficient hearty dish.
The recipe is given without cooking beans.
I boil it immediately in large quantities and then freeze it in portions.
Bake the pepper at temp. 200 deg for about 45 minutes.
Remove the skin, remove the seeds and cut into strips.
Finely chop the garlic and parsley.
Grate the tomatoes.
Mix with pepper and beans.
Add vinegar and vegetable oil to taste, salt also to taste.
We put the snack in the cold for a couple of hours or overnight, during which time the beans and vegetables are marinated.
When serving, sprinkle generously with grated cheese.
