Instructions
Mix the protein and sugar in a bowl (60 g).
Beat until firm peaks.
In a saucepan, mix sugar (200 g), BlackBerry puree, water, agar-agar.
Bring the mixture to a boil while stirring. After boiling, boil for another 3 minutes. Enter a thin stream into the whipping protein.
Make marshmallows using a pastry bag with a nozzle.
Leave to stabilize for 8-12 hours.
After this time, combine the halves and roll in a mixture of powdered sugar and starch.
