Tea cake-Tea Brakk from the book Irish Food & Folklore “Brakk” from the Old Irish “break” translates as spotted, variegated. Look at a piece of cake, really – spotted. The pie turns out juicy, fragrant and fruity.

Dried fruits of three types: raisins, cranberries, citrus candied fruits are already soaked in brewed black tea.
If you don’t have candied fruits, add more raisins or cranberries and lemon or orange zest for flavor.
Brew tea in 300 ml of water, strain after five minutes (or take out the tea bag), pour in dried fruits and leave for 3-10 hours.
Mix the flour with baking powder, baking soda and spices.
Add the dried fruits together with all the liquid.
Beat the eggs with sugar.
Add to the flour mixture.
Mix well so that no traces of flour remain.
The dough is not very thick, it is easily stirred with a spoon.
Form a brick with a volume of 1 liter, grease with melted butter and pour the dough into the mold. We put it to bake in the oven, preheated to 160ÂșC.
Bake 1-1 1/2 hours until the dough is dry on a stick.
There should be no control marks on the stick.
If the pie is very baked on top – cover with baking paper or foil.
Remove the finished pie from the oven and leave it in the mold for 10 minutes, then transfer to the grill and cool completely.
