Five years ago, I found the perfect recipe for a Christmas cake and every year I bake it for the new year and Christmas holidays. In order to bake a festive cupcake, you need to prepare dried fruits in advance, namely, infusing them with cognac. I use a different mixture of dried fruits every time, you can add nuts if you want. After baking, of course, you can immediately enjoy the cupcake, but after a week or two, it will become much tastier and more fragrant.
A few days before baking, pour the dried fruit mixture with brandy and leave to infuse.
Get the oil out of the refrigerator in advance so that it becomes soft. Beat it with sugar until fluffy. One by one, add the eggs to the mixture, continuing to whisk.
Mix the flour with the baking powder and vanilla and sift through a fine sieve. Combine the dry and liquid components of the dough and mix.
Put the dried fruits on a paper towel and dry them a little, sprinkle them with flour and add to the dough. Stir
Grease the baking dish with butter and lightly sprinkle with flour. Put the prepared dough. Lightly tap the mold on the surface to evenly distribute the dough
Preheat the oven to 180 degrees. reduce the temperature to 150 degrees and put the form with the dough to bake for 1.5 hours.
Check the readiness of the cake with a wooden skewer.
After baking, wrap the cake in parchment paper. and then in foil and store it until the desired hour in a cool place.
Before serving, decorate the cake with icing of powdered sugar and lemon juice.
