We dry the peaches, remove the stone and cut them into wedges.
Fry the peaches on both sides in olive oil in a grill pan.
Put the fried peaches in a salad bowl.
Add the mozzarella.
Mix 2 tbsp olive oil with balsamic, honey and a pinch of mustard powder, beat well and pour over the peaches.
Sprinkle with pine nuts.
Serve on toasted toast, sprinkled with sliced Basil.
From these products, I got 10 small toasts.
