  1. We will need gelatin in plates, but if you do not have it, do not despair, take the usual one, following the instructions on the package. Soak 5 plates in cold water for 10-15 minutes.
  2. Pour milk, cream, sugar and half a stick of vanilla into a saucepan with a thick bottom.
  3. Put the pan on the fire, as soon as the mixture begins to boil, immediately remove from the heat.
  4. In the meantime, wash the persimmon, we will need it very ripe, soft.
  5. Mash it into a puree using a blender.
  6. Now remove the vanilla stick from the milk mixture. Squeeze the gelatin and add it to the milk mixture, mix well so that the gelatin dissolves. Then pour the mixture into the pulp of the persimmon and whisk with a blender. Pour the cream over them and put them in the refrigerator for 8 hours.
  7. Now prepare the caramel plates. To do this, we will need walnuts, which need to be crushed.
  8. Dissolve 100 g of sugar with water in a saucepan with a thick bottom over low heat, as soon as the sugar begins to caramelize, add the nuts, then pour the resulting mass onto the parchment and cool.
  9. Serve panna cotta, garnished with pieces of caramel and mint leaves.
