Delicious, tender and hearty salad with white beans in tomato sauce and mushrooms. I like that the salad turns out to be hearty, but not greasy, because the oil is used only for frying.

  1. Fry the mushrooms in sunflower oil until tender.
  2. Fry the onion until golden brown.
  3. Carrots until tender. I fried everything separately, but I think we can fry mushrooms, onions and carrots together to save time.
  4. Put the beans together with the sauce in a salad bowl.
  5. Add the remaining ingredients, mix well, sprinkle with coriander (optional). If you like cilantro, you can add more of it, it goes very well with beans. It turns out delicious, satisfying and with tomatoes 🙂
