Instructions
  1. Wash the arugula, dry it with a paper towel, tear it or cut it into slices.
  2. Wash the cucumber, cut into half rings or strips. Mix with arugula.
  3. In this salad, the Chinese use a paste of hot red pepper with sesame seeds and peanuts, it is sold in all our stores, I have brought it from China many times. But I don’t like it because I don’t like peanuts. If you have one, you can use it. I suggest a more affordable option. Mix soy sauce, I have soy sauce, olive oil, table vinegar, mustard with grains, honey and chili flakes. The dressing should be sweet and spicy at the same time.
  4. As I already wrote, I don’t like peanuts, so I replace it with pine nuts. By the way, many Chinese eateries also use this option. Pine nuts are dried in a frying pan until a light aroma appears.
  5. Pour the dressing over the salad, sprinkle with pine nuts.
