For this salad, you will need salted almonds. I made nuts immediately from 200 grams, they are perfectly stored then in a closed container for about a week.
For almonds, you will need 1 tablespoon of olive oil and a piece of butter, about half a teaspoon.
Another 1 tbsp of salt, and half a teaspoon of thyme and rosemary. Mix all dry ingredients. Heat the oil and fry the nuts for about 5 minutes, then carefully remove them and pour the fragrant mixture on them, mix everything and leave to cool.
Our salted salad nuts are ready.
For the marinade, you will need 4 apricots, mint leaves, vinegar and oil.
All the ingredients are crushed with a blender, salt and pepper to taste.
Put the sliced apricots on the arugula and mint leaves, crumble the feta and sprinkle with salted almonds. Pour the fragrant marinade and enjoy!
