  1. Boil the pasta in boiling salted water until “al dente”.
  2. Grate carrots on a coarse grater, fry in vegetable oil, stirring, 3-4 minutes.
  3. Add the arugula to the carrots and fry for another 1-2 minutes.
  4. Add soy sauce and water to the vegetables and simmer for another 2-3 minutes.
  5. Chop the almonds, add them to the carrots and arugula, and use a blender to mash them.
