I suggest another version of stuffed potatoes, in Mexican style. Potatoes – a welcome dish on any table, cooking it in this way turns out a hearty dish, a real extravaganza of tastes.
Pre-boil the beans (you can use canned) and potatoes until fully cooked.
I prefer to bake potatoes in the oven in foil.
Cut the onion into cubes and fry until Golden in a small amount of vegetable oil.
Add the sliced sausage.
Cut the pepper into cubes and also send it to the pan.
Add the beans, minced garlic, salt and pepper.
Simmer the filling for about 2 minutes. At the end, add fresh coriander.
Cut the core from the potatoes, form cups with walls of the desired thickness and stuff with the filling.
Delicious both hot and cold.
