  1. Peel the shrimp from the shell, leaving the tail, add salt, sprinkle with lemon juice.
  2. Tomatoes of medium size, preferably cream color, cut into quarters, clean from seeds and partitions.
  3. Peel the avocado, add soft curd cheese, pepper and a little lemon zest.
  4. Using a food processor or blender, whisk the cream of avocado and cheese. Pour cream over the tomato slices. Garnish with shrimp on top.
