  1. Shrimp clear from the shell, leaving the tail, season with salt, sprinkle with lemon juice.
  2. Medium-sized tomatoes, preferably cream, cut into quarters, clear of seeds and partitions.
  3. Peel the avocado, add soft curd cheese, pepper, and a little lemon zest.
  4. With the help of a food processor or blender to whip the cream of avocado and cheese. Fill the tomato slices with cream. Garnish with prawns on top.
