Tomato with Mint Bean Salad Recipe
During the Fast, you should definitely include legumes in your diet. They are a source of protein, they saturate. I offer you a version of the bean salad with wild cherry and spicy dressing.

  1. Soak the white beans overnight in cold water, then boil until soft, adding salt to taste at the end I always boil the beans in advance, and then freeze them in small portions. It’s convenient. I took a bag of frozen beans out of the freezer, defrosted them, and that was it.
  2. For dressing, mix soy sauce with balsamic, oil and mustard, add a pinch of oregano.
  3. Finely chop the cherries.
  4. Finely chop the sun-dried tomatoes, add them to the beans, and add the cherries here. Lightly chop the beans with a fork. Crush about half the beans. Why is this necessary? The dressing will penetrate the mashed beans, soak them, and the salad will be much juicier.
  5. I decided to serve the salad in tomatoes. Cut off the tomato cap and remove the pulp with a teaspoon.
  6. Add the dressing to the salad, mix, and fill the tomato salad. In a simplified version-just cut a tomato and add it to the salad-it’s also delicious!
