I suggest a salad of baked pumpkin with feta. Salad can be quickly prepared from available products. It turns out a wonderful combination of soft pumpkin and feta with sweet and sour dressing. The seeds will perfectly complement the salad.
Peel the pumpkin from the seeds and peel, cut into small pieces.
Add a little salt, spices, and red pepper.
Cover the form or baking sheet with baking paper, grease with vegetable oil.
Lay out the pumpkin in an even layer. Bake in a preheated oven from 180C to 200C for 15-20 minutes, the pumpkin should become soft.
For dressing, mix olive oil with vinegar,
whisk thoroughly to make an emulsion, add honey, salt and pepper to taste.
Once again, whisk everything thoroughly.
Cut the feta into small pieces or crumble.
Fry the seeds in a dry frying pan.
Put the cooked pumpkin on a plate, add feta, parsley, ground black pepper.
