  1. Boil or bake the beets until tender. I baked for about an hour. Cut it into slices.
  2. Finely chop the onion and fry in vegetable oil until soft.
  3. Bring the cream to a boil. Add beetroot, onion and lightly salted soy sauce to them. Mash into a puree using a blender. Salt is NOT needed!!!
  4. Cut feta cheese into cubes.
  5. Pour the cream soup on plates or bowls, add pieces of beetroot and feta. Sprinkle with parsley.
