We prepare products for fried eggs. I will make it for my breakfast from one egg. In a large frying pan, you can make several eggs at once and for this, accordingly, you need to increase the number of ingredients by the number of eggs. From the protein, you need to separate the yolk so that it remains intact.
To make our scrambled eggs turn blue, we need to squeeze out the juice of their red cabbage. It can be pressed using a juicer. Since I need a small amount of juice, I will use an immersion blender. I will cut a piece of cabbage into a small cube, put it in the bowl of a blender and break it.
After 2 layers of gauze, I will squeeze the juice into the milk. We need 25 ml of milk and 25 ml of juice for 1 egg. It is convenient to use a measuring cup. The mixture will initially be purple.
Add egg white to the cup, salt to taste and combine.
I will fry scrambled eggs in butter. First, I will melt a small piece in a serving pan, and then pour the egg mixture into the pan.
As soon as the mixture begins to set, carefully spread the yolk on top. Fry until tender. I like the yolk to remain viscous.
The scrambled eggs are ready.
