Egg Tea Recipe
One of the most popular hot drinks in England, the so-called “egg tea”. In general, I can’t stand tea with milk, and I even got tea, which, no matter how you brew it, is tasteless and that’s it. I came across a recipe for egg tea, and the tea prepared according to this recipe turned out to be so delicious that I even decided to make a gift according to this recipe.

  1. Boil the milk.
  2. Only yolks are needed to make tea. Carefully separate them from the proteins.
  3. Whisk the yolks with cane sugar into a homogeneous mass.
  4. Brew black tea (1 tablespoon) with boiling water (50 ml.). It’s better, of course, to do it in a teapot, but I don’t have a large teapot. Withstand welding for 2-3 minutes.
  5. Add boiling milk. Stir the tea strongly in the teapot with a spoon. Let it brew for 5 minutes.
  6. Quickly pour in the yolks, stirring them continuously so that they do not curdle for 1-2 minutes. Pour the custard into cups and serve for dessert. You can add cream, vanilla, 10 g of butter to the milk.
