We rarely eat zucchini fresh, preferring to make caviar, casseroles, and stew them as a side dish… It turns out that fresh zucchini marinated with white wine vinegar and honey can compete with traditional vegetable salads! A very unusual and delicious snack, I invite You to try it!
Cut the zucchini as thin as possible (a vegetable peeler is good for this). Salt and leave for half an hour.
Cut the bell pepper into strips, chop the garlic and coriander finely.
For the marinade, mix vinegar, oil, salt (about 0.5 tsp), honey and black pepper. Beat it with a fork. Lightly squeeze the zucchini from the juice, add pepper, herbs and garlic, pour the marinade, mix gently and put in the refrigerator for 4 hours.
An unusual summer snack of fresh zucchini is ready!
