Cook more of these cutlets if you plan them for a picnic. Because the smell of garlic, for sure, will catch up with the neighbors. And there is a lot of garlic in these cutlets – a whole head!
Cut the fillet into pieces and send it to the processor along with the peeled garlic and parsley. Chop into minced meat.
You can also pass it through a meat grinder.
Add mustard and a couple of spoonfuls of white wine to the minced meat. Add salt and pepper to taste, mix well and refrigerate for 1 hour.
Form small balls of minced meat.
To make the cutlets flat press them down with a potato pusher or a small plate.
Brush each cutlet with vegetable oil.
Fry on a preheated grill for about 3-4 minutes on each side. The main thing is not to dry out! Serve with a vegetable salad.
