The tonic hot drink consists of natural apple juice with the addition of grapefruit pulp, which gives a slight bitterness, and aromatic spices. The warming soft drink is ideal for those who like to celebrate New Year’s holidays in the fresh frosty air.
To prepare the drink, I used homemade concentrated apple juice. Remove the zest from the grapefruit with a fine grater, without affecting the white layer of the peel. Also grate the fresh ginger root on a fine grater – you will need 1 tbsp. l.
In a saucepan, bring the apple juice and water to a boil, add ginger, grated zest of one grapefruit, cinnamon stick and star anise. Cook on low heat for 8-10 minutes. Then strain through a sieve (spices are no longer needed).
Peel the grapefruit, break into slices, separate the pulp from the films. In a tall glass, grind the grapefruit pulp with an immersion blender until smooth.
Pour the crushed grapefruit pulp into a saucepan with juice, add honey. Warm up the drink, but do not boil it.
