Potato Salad with Radishes and Cucumbers Recipe
A simple, delicious and healthy salad with fresh cucumbers, radishes, green onions and celery, where boiled potatoes and chicken are added for satiety. Instead of mayonnaise, cold-pressed linseed oil with boiled eggs and apple cider vinegar is used. Lovers of spicy taste can add mustard.

  1. Wash the potatoes. Cook or bake it in any way. In my case, it was baked in the oven (in a glass form with a lid: for 30 minutes at 170C). Cooled for another 20 minutes. The cooking/baking time depends on the size of the vegetable and the method of its preparation. We peel the cooled potatoes from the skin. If desired, new potatoes can be used with the skin. A fashionable trend in cooking is to eat potatoes with skin. I’m old-fashioned, so I peeled the potatoes. Cook chicken drumsticks for 30 minutes (starting the countdown after boiling and removing the foam). If desired, you can add bay leaf and / or black pepper and salt. The bonus ingredients for the broth are not listed as mandatory elements of the salad. The finished broth can be used for other dishes. After the end of cooking, it is necessary to pull out the chicken drumsticks and cool. Separate the meat from the bones. Cook the eggs in any way. In my case, I give them a good boil. Then I turn off the electric heating of the stove. I leave them to cook in hot water, which cools slowly, for 9 minutes. Then I cool it in cold water. Then I clean them. Celery, radish, green onion and cucumber must be washed. Peel the onion from the roots, if there are any. Peel the radish and cucumber from the tails.
  2. We crumble the prepared ingredients. Season with cold-pressed oil and apple cider vinegar to taste. Salt and pepper to taste. Mix it up. If necessary, decorate with cucumber slices. The salad is ready.
