An exquisite salad with baked duck and juicy sweet pear. Its taste is perfectly complemented by a slight bitterness of cranberries and the piquancy of blue cheese.
Mix 2 tablespoons of soy sauce and 2 tablespoons of orange juice, marinate the duck breast in this mixture for half an hour. Wrap it in foil and put it in a preheated 200°C oven. Bake for 30 minutes, cool completely in foil, cut into thin slices.
Cut the red onion into thin half rings, pour 2 tablespoons of orange juice and, slightly kneading with your hands, leave to marinate for 30 minutes.

For dressing, mix soy sauce, orange juice and zest, butter, grainy mustard and Italian herbs.
