  2. Cut the eggplant into slices or half rings. Fry in vegetable oil. Place the finished eggplants on paper towels to remove excess oil. Cut tomatoes into slices, pepper into strips. Cut the pickled cucumbers into small cubes. Add the chilled eggplant to the salad.
