  1. Wash the arugula and figs and let the water drain.
  2. Cut the sturgeon lengthwise, remove the mozzarella from the brine.
  3. Put arugula, balyk, mozzarella, chopped figs on a common dish or spread them on plates in portions. Drizzle with olive oil. Add salt if necessary.
