1 (I personally like more). Cut fresh white bread (it’s good, freshly baked) into cubes, put on an ungreased baking sheet and at 160 degrees, stirring occasionally, dry until golden and cooked. Leave the right amount for the salad, the rest in a meat grinder and breading.
Option 2. Fry the bread cubes in a skillet until crisp.
I always dry in the oven, crackers are less greasy and more delicious.
