Wash the cauliflower, dry with a paper towel and disassemble into small inflorescences. Melt the butter, squeeze the garlic into it and stir.
In a separate bowl, mix together the crackers, parmesan, salt and pepper.
Preheat the oven to 204 * C (400 * F), cover the baking sheet with parchment. Dip each piece of cabbage in oil and roll in a mixture of crackers and parmesan. Put on a baking sheet and bake for 20-25 minutes until golden brown.
