Baked Cauliflower Salad with Arugula and Nuts Recipe

  1. Disassemble the cauliflower into inflorescences. Blanch in boiling salted water for 2-3 minutes, discard in a colander.
  2. Wash and dry the orange, remove the zest. Cumin seeds (cumin) grind in a mortar. I love Cumin, so I took it twice as much as indicated in the ingredients. Put the cabbage on a baking sheet, sprinkle with zest and cumin, pour oil, mix with your hands and put in the oven, preheated to 170-180 * C.
  3. After 10 minutes, remove the baking sheet, sprinkle with walnuts, return to the oven and bake for another 5 minutes.
  4. Wash and dry the arugula. Prepare the dressing. Squeeze orange juice, add oil, salt, pepper, mix with a whisk.
  5. To prepare the salad: put cabbage with walnuts, arugula on a dish, pour the dressing. I made a salad in two versions – for men I added raw smoked meat. I can say that both are perfectly good.
